Holly’s Family Favourite Banana and Blueberry Loaf Cake

The beauty of this recipe lies in its simplicity and – touch wood – it always seems to turn into delicious cake! In fact, if I make this at the weekend, it rarely has chance to cool down before the kids have demolished it. Hope you love it too!

Ingredients

  • 140g butter (room temperature)
  • 140g caster sugar
  • 140g self raising flour
  • 1tsp baking powder
  • 2 large eggs (beaten)
  • 2 ripe bananas (mashed)
  • 150g blueberries (cut in half)

Method

1. Preheat your oven to 160°C (fan oven) / 180°C (no fan) / 350°F, and line your loaf tin with parchment paper or use a non-stick spray.

2. Combine the butter and sugar together until light and fluffy – either by hand if you’re feeling energetic, or with an electric mixer (that’s me!) if not.

3. Then add the baking powder, about half the flour and 1 egg. Mix together, before adding the rest of the flour and the 2nd egg, followed by the banana.

4. Once everything’s combined, gently stir in the blueberries. I like to cut them in half as it seems to stop them from sinking to the bottom.

5. Pour the mixture into the loaf tin and cook for 40-50 minutes, making sure to check it after 40 minutes.

6. Once cooked, you can serve on its own, with fresh fruit or even yoghurt. Personally, I love it just as it is, with nice cup of tea, when it’s still warm from the oven!
